Why 48 hours and not two

Dough left to ferment for two days develops aromas a same-day dough simply does not have, and the crumb ends up lighter. That is why ours is prepared in advance and baked in a wood oven, with an airy rim and a firm base.

The Pizza Tonnara, our oldest recipe

The Tonnara (€13.90) came out of our oven for the first time on 14 March 1994 and it is still the most ordered. Beside it: Margherita DOP (€11.90), Diavola (€12.90), Quattro Formaggi (€13.50), Prosciutto e Funghi (€12.50) and Vegetariana (€12.90).

Do you have a gluten-free pizza base?

Yes, we offer gluten-free options; tell us when you book so we can prepare it with a safe protocol.

We have gluten-free, vegetarian and vegan dishes on the menu, and we also adapt recipes when you let us know. The best thing is to tell us when you book: that way the kitchen prepares your dish with a separate protocol and can suggest alternatives within what you fancy. If you have a specific allergy, mention it and we will go through it dish by dish with you.

Our classics are fresh pasta —carbonara romana, tagliatelle alla bolognese, ricotta and spinach ravioli, lasagna della casa— and sourdough pizzas with 48 hours of fermentation, with the Pizza Tonnara and the Margherita DOP among the most ordered. What is different about the Tonnara?

The Tonnara is the original house recipe from 1994, with our fixed combination of toppings; it is the benchmark for the rest of the menu.

At San Marco we cook Italian the way it is cooked at home: fresh pasta made daily, dough proved for 48 hours and family recipes we have never changed. We have been next to the Plaza de España since 1994, with two daily services and options for almost any taste or need.

The bus stop is right at the door and there is a public car park about 50 metres away, so arriving by car or public transport is easy. We make fresh pasta every morning in our own kitchen and prove our pizza dough for 48 hours, which gives a light, easy-to-digest crust. We work with Caputo 00 flour, mozzarella di bufala DOP, 24-month prosciutto di Parma and extra virgin olive oil from Tuscany, imported directly: no frozen pasta, no pre-made pizza and no shortcuts. That is the difference between an Italian dish and a dish that is merely named Italian.
