If you are going to eat Italian in Seville, the question is not where but what to order. This guide goes dish by dish: what each one is, how it is done well and how you can tell when it is not.

## Puntos clave
- How to spot a good antipasto
- Real carbonara has no cream
- Long fermentation shows in the rim
- Tiramisu must taste of coffee

## Starting: antipasti and starters

The antipasto is the test. A carpaccio should be thinly sliced and cold; a burrata, at room temperature so it oozes; a bruschetta, with the bread toasted just right and the tomato properly dressed. If the starters are cared for, the kitchen is cared for.

## The middle: pasta and pizza

With pasta, the bite and the sauce matter most; a real carbonara has no cream, so if it is suspiciously creamy, be wary. With pizza, an airy rim and a firm base signal a long fermentation: ours runs 48 hours and is baked in a wood oven.

## The end: dolci

Tiramisu is the most faked dessert: if it tastes of cream rather than coffee, it is not tiramisu. Panna cotta should wobble without being liquid, and cannoli are filled to order, not hours earlier.

## Preguntas frecuentes

### What should I order first in an Italian restaurant?
An antipasto to share: it reveals the real level of the kitchen.

### Does carbonara in Spain contain cream?
The real one does not — egg, guanciale, pecorino and pepper. With cream it is a different dish.

### How can I tell if the pizza had a long fermentation?
Look at the rim: airy, with bubbles, and a firm base that does not flop. Ours ferments for 48 hours.
